Another Recipe

I made Mexican Chicken Casserole last night and it was great.....it was so pretty with the red and green that I will have to make sure and make it for someone at Christmas time....it was very easy and I even prepared it that morning and it was a hit at the house...Miller of course ate hot dogs...but that was okay....

Here is the recipe....enjoy!

Mexican Chicken Casserole

3-4 Chicken Breasts cooked
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel Tomatoes
1 small diced onion
1 green bell pepper diced
1 tbsp garlic powder
1 package of cheddar cheese
1 can mexi corn
Doritos

Crush Doritos in the bottom of a 9 X 13 inch pan. Bake in the oven 5 minutes on 350. Remove and place cut up chicken, soups rotel, onions peppers, garlic powder, corn and cheese in a bowl together. Pour over chips and cook in the oven on 350 for 1 hour...remove crumble the remaining crumbs of Doritos on top and bake 5 more minutes.....

Now....if your kids cant do spicy like mine cant.....do the mild rotel or diced tomatoes will do....I do the mild rotel and Madison will eat it....

oooh, I LOVE Frito pie!!

We actually had something VERY similar last night at my house!
My aunt surprised me by coming to stay and made me some chicken enchiladas but she turned it into a casserole with those same ingredients...
