Menu Plan for the week of November 14th



Dessert of the week....

Monday.....Scott's Birthday choice.....

Mexican Lasagna

1 pkg Lasagna Noodles
1 ½ ground beef
1 pkg Taco Seasoning
1 can corn with red and green peppers
½ cup water
1-8 ounce cream cheese onion & chive
1 cup shredded cheddar cheese/ monterary jack blend
1 can enchiladas sauce
1 can green enchiladas sauce
1 medium jar pace picante sauce with cilantro

Cook and drain noodles…..brown ground beef…drain. Add 1 pkg of Taco Seasoning, 1 can of the corn with peppers, ½ cup of water…..mix. Add to the mixture, cream cheese onion and chive and 1 cup of shredded cheddar cheese/ Monterary  jack  blend, the can of enchiladas sauce and the can of green enchiladas sauce..the medium picante sauce…mix very well on medium heat. Put a small of beef mixture on bottom of a 9x13 pan sprayed w//PAM. Layer noodles, beef and some more cheese on top…alternate until all used and end with sprinkled cheese…Cover with foil. Bake @ 375 for 45 minutes….

I'm on vacation this week, but thought I would leave you with some comfort foods to try...


Ky Hot Brown…Good for leftover Thanksgiving turkey
Ingredients
  • 1/2 cup butter
  • 6 tablespoons all-purpose flour
  • 3 cups milk
  • 1/2 cup freshly grated Parmesan cheese, divided
  • 1 egg, beaten
  • salt and pepper to taste
  • 1 tablespoon butter
  • 2 cups sliced fresh mushrooms
  • 1 tomato, thinly sliced
  • 1 pound thinly sliced cooked turkey
  • 8 slices bread, toasted
  • 8 slices bacon, cooked
Directions

  1. In a large skillet, melt 1/2 cup butter over medium heat. Stir in enough flour to absorb all of the butter. Slowly whisk in the milk, and 6 tablespoons of Parmesan cheese. Stir in the egg to thicken the sauce, but do not allow to boil. Remove from heat, and season with salt and pepper to taste. 
  2. Heat remaining tablespoon of butter in a small skillet. Saute mushrooms in the butter until soft. Set aside. 
  3. Preheat your oven's broiler. For each Hot Brown, place two slices of toast onto a heatproof plate or dish. Cover the toast with about 1/4 cup sauteed mushrooms and a couple of tomato slices. Place a liberal amount of turkey onto each Hot Brown, and pour an even more liberal amount of sauce over. Smother that baby. Sprinkle remaining Parmesan cheese over the top. Repeat with remaining ingredients. 
  4. Place the entire dish under the broiler until the sauce is speckled brown and bubbly. Remove from broiler, criss-cross two slices of bacon on top, and serve! 

Italian Vegetable Soup



1lb. lean ground beef or turkey
1lg can 46oz. chicken broth
1qt water
1pkg onion soup mix
2 stalks of celery, chopped
1 can 14.5oz. stewed tomatoes, cut up
1pkg 10oz. frozen mixed vegetables
1/2 c pasta (orzo or other small pasta)

In large pot, brown meat.
Add chicken broth, water, soup mix, & celery. Boil 20min
Add stewed tomatoes, frozen vegetables. Boil 15min
Add pasta & boil until pasta is done. 


Huge Ham Hoagie
1 loaf of French bread
1 pound of ham (I used Starnes BBQ ham – shaved)
10 slices of Deli Deluxe American cheese
Mayo
Mustard
1 stick of butter
1 T poppy seeds

Slice the loaf of bread so that it opens, but remains connected at the seam.  Spread mayo and mustard on the bottom, top with ham.  Lay slices of cheese on sandwich diagonally.  Melt butter and stir in a Tbsp of poppy seeds.  Drizzle over top of cheese.  Cover completely in foil.  Heat in oven until cheese melts.



Chicken and Dressing

INGREDIENTS

  • 3 pounds skinless, boneless chicken breast meat
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of celery soup
  • 1 (10.75 ounce) can milk
  • 1 1/2 cups chicken broth
  • 1 (6 ounce) package seasoned cornbread stuffing mix

DIRECTIONS
  1. Place chicken in a large saucepan full of lightly salted water. Bring to a boil; boil for about 30 minutes, or until chicken is 
  2. cooked through (juices run clear). Remove chicken from pan, reserving broth. Cut chicken into bite size pieces and place in bottom of a 9x13 inch baking dish.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. In a medium bowl mix together cream of chicken soup and cream of celery soup. Fill one empty soup can with milk, and mix milk with soups. Pour mixture over chicken. In a small bowl combine stuffing and broth; mix together and spoon mixture over casserole.
  5. Bake in the preheated oven for 45 minutes.
Breakfast Burrito's 

3 dozen eggs
2 one-pound packages Jimmy Dean sausage (I use regular flavor but sage or maple would also be good)
2 32-ounce packages Ore Ida frozen hash brown potatoes (shredded or cubed, your choice, I use cubed)
2 7-ounce cans Ortega diced green chiles
1 medium yellow onion
16 to 24 ounces shredded Cheddar cheese (depends on how much cheese you like)
salt and pepper to taste
24 large (burrito size) flour tortillas

Scramble the eggs. I beat the eggs with about half a cup of milk and a couple of tablespoons of water and salt and pepper to taste.

Cook the hash browns according to package directions. I chop one yellow onion up and add it to the hashbrowns as they cook.

Cook the sausage. I chop it pretty well, so it's crumbly, as it cooks.

Using the biggest mixing bowl you can find, place hash browns, scrambled eggs and sausage in the bowl and mix gently but thoroughly. Add the green chiles and gently stir into mixture.

Place the flour tortillas on your kitchen counter, just a couple at a time so they don't dry out (if they dry out, they break when you fold them), and sprinkle Cheddar cheese down the middle. Place a couple of big spoonfuls of the potato-egg-sausage mixture on top of cheese. Fold burrito, folding the short ends in first and wrapping the long ends around.

Wrap each burrito individually in aluminum foil and freeze. These last a couple of months in the freezer - maybe longer, but I don't chance it with the eggs being factored in.


Here's how I prepare them when we're ready to eat them. I take the number I need out of the freezer the night before and let them thaw in the refrigerator overnight. The next morning, since they're already wrapped in aluminum foil, I just pop them in a 350 degree oven for about 20 minutes until they're heated through. If they're not completely thawed, just heat them a little longer.

Banana Pudding

  • 1 (8 ounce) package cream cheese
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (5 ounce) package instant vanilla pudding mix
  • 3 cups cold milk
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 4 bananas, sliced
  • 1/2 (12 ounce) package vanilla wafers


  1. In a large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk and vanilla until smooth. Fold in 1/2 of the whipped topping. 
  2. Line the bottom of a 9x13 inch dish with vanilla wafers. Arrange sliced bananas evenly over wafers. Spread with pudding mixture. Top with remaining whipped topping. Chill.

Menu Plan for the week of Febuary 15th

Monday...Breakfast for dinner. My kids love this. I'll be doing bacon, sausage, biscuits with gravy, eggs and french toast sticks....its so comforting.

Tuesday....Smothered Burritos...I saw this recipe and it just looked so good. AND...it was!!!!

A lot of my friends have asked for easy, on the go meals or snacks...there is prepping involved with this. I always have some kind of "snack meal" in my fridge to grab and go.
Breakfast around here is in stages...that is our life right now. Scott gets an egg and cheese sandwich every single morning to go. Miller takes a protein shake because he can't eat that early. As for me and Madison we eat eggs a lot or protein shakes. We have an easier morning than the boys.

Snacks and Meals on the "GO"

Chicken Bacon Ranch Pinwheels....make these up and put them in the fridge...pop some out and heat and go.

Salads....I meal prep my lunches throughout the week. I have small containers and I make up salads minus the dressing. I pour my dressing on them last second and go.
(Yes, while running errands you can see me at stop signs eating a salad....truth)

Lunch Kabobs....I make these up and we grab and go.

I also take Greek veggie dip and put 2-3 tablespoons in a small container and stick carrots and bell pepper slices in it...grab and go.

Fruit....there is ALWAYS a piece of fruit and Peanut butter crackers in my Suburban at ALL times.
(and about 108 half drank water bottles rolling around...but we are not talking about that today)

Protein Shakes...we drink these a lot. I carry one with me to fight off hunger pains. It always does the trick.

Smoothies....we do these in the summer when there is more time. The kids love looking up recipes. Here are two favorites around here

Trail mixes are popular here. I also let the kids make their own up.

Some tips on Surviving Winter

Good tips for helping your car survive Winter

So winter weather is gonna happen where I live. Here are some tips on being prepared at all times.

For your car....keep a big box in the trunk with a blanket, extra gloves, Hats, Snow boots, umbrella, roll of toilet paper, flashlight, water, peanut butter crackers for protein and some chocolate for a kick, radio with new batteries......you just never know...make sure you have a phone charger in your car too. When you hear we are going to have bad weather...go gas up your cars.

Indoors....Keep all electronics CHARGED UP!! If you lose electricity at least you will have phones charged to call someone. (Electric company)
Flashlights with new batteries, matches for candles, a source of heat.....a week supply of food and water. This does not mean rush to the nearest grocery store. Just make sure you have a gallon of milk, toilet paper on hand, water...I always buy an extra case of water every week for an emergency stash. Meal Plan for the week of January 18th








Dessert of the week......Snow Cream and Homemade Hot Chocolate...for those Snow Days

Monday....Crock Pot Steak with Gravy  (Miller's favorite thing) over mashed potatoes and green beans, rolls

Tuesday....Mexican Pizza with chips and salsa on the side

Wednesday...Meatball Lasagna with Texas Toast

Thursday....leftovers

Friday....On Friday nights...the kids are normally not here...out with friends...so I do a dinner that Scott and I like (a grown up dinner..lol) Italian Sausage Spinach and Havarti Crescent Braid

Saturday....eating out...Kitchen is Closed

Sunday....Brunch after church...Crock Pot Breakfast Casserole..( I will set my alarm for around 4am to turn on my crock pot....will make this the night before)...Dinner....Sausage and Penne Soup....yummy on cold nights! I'll add some kind of bread to dip in it.

Winter Blues

Several of you have asked if I was going to talk about the dreadful.."Winter Blues". January is just so cold. It's hard to get excited about leaving your house when its 20 degrees outside with a wind chill of 10. Or when its dark and cold outside. That's even worse. 
Don't get me wrong, my happy place involves sunshine, tank tops, flip flops, sunscreen, the ocean, warm evening walks, ponytails, ice cold drinks and warmth galore!!! Once Christmas and the first fall of snow has passed..... I'm ready for it to be over.
Of course, for so many of us...Old Man Winter over stays his welcome.
Winter is a season, though. I try to embrace it. I feel its a time to pull quilts out, make warm drinks to sip, snuggle into your home for a quiet winters nap. It's a resting time. On nights we are home, we watch a lot of movies (kinda catch up). I cook a lot of comfort foods, and bake fun stuff for the kids. I also have a a little "nook" in my family room. It's my chair with a basket of favorite things in it, books (devotions) magazines, my iPad, ear phones, a jar of cashews (mine only), a few hershey kisses...all tucked together for "me time". 
When I feel a little down, I try to get outside, feel the sunshine, take a walk or a run. Colors are important too, yellows, reds, oranges all make your heart smile. Winter won't last forever, so make the most of it. 


Snow Day Ideas

Puzzles....go buy 2-3 today. It's a great thing with kids.

Have a movie marathon, in your pajamas. Make fun foods like a taco bar or spaghetti for lunch. Homemade pizza shaped like a snowman is fun. 

Do a Board game Marathon


Snow Paint Indoors on the Cold Days...when my kids were little I filled the bathtub up with snow and let them go. It all drains out when it melts. They loved it.

Sugar Cookie Pizzas....Cookie dough from the store, toppings...strawberry jam or red frosting, coconut for cheese, red M&M's for pepperoni....a fun thing for kiddos

Picnics in the living room are great. We actually do this a lot.

Freeze cool whip dollops in cookie cutters for your hot chocolate...

Birdseed Ice Ornaments....this is my favorite thing to do with Miller in the winter. We do it every year.

Snow Volcano....Science fun at home

Water Balloon Marbles...these are all over Pintrest...they are so pretty

Tic Tac Toe in the snow

Melted Snowmen Cookies

Sundae Bar with pudding cups....toppings, whip cream in a can, candies, cherries...these are fun.

Tip of the day......
How to get your kids out of bed on those cold mornings.....put their clothes in the dryer...they will jump right into them.

Meal Plan for the week of January 11th






Dessert of the week.....Holy Cow Cake....this cake has several names...its really good though

Monday....Sausage and Taters Casserole...one of our favorites, not that healthy but very comforting.

Tuesday....Garlic Shrimp Tortellini Toss with this salad...(you can use bacon instead of prosciutto)

Wednesday......Lasagna Stuffed Shells with Texas Toast

Thursday.......Taco Grilled Cheese Sandwiches....I make taco meat weekly, mostly because Miller loves it...so when I have leftovers this is what we make!

Friday......eating out...

Saturday.....Broccoli Chicken Roll with Ambrosia Salad for dessert....one of my favorite things ever!

Sunday......Brunch after church... Overnight Ham, Egg and Cheese Monkey Bread.......Buffalo Chicken Soup...new recipe...my family loves buffalo chicken wings and even though Madison is completely sick of soup right now, I'm still gonna make it.

A lot of you have asked about Madison last week. She got thru having her Wisdom Teeth taken out. It has been a struggle. She is sick of Soups and Mashed Potatoes. Hopefully she can get some Chick Fi Le soon!! Thank you all for the prayers, phone calls, texts and cards. She is healing finally.

At the beginning of each New Year everyone always talks about getting into shape, eating better, finding a "New You".  Yes, all this sounds wonderful. I even joined a bootcamp class this month to get it together. But in all reality....there is not really a "New You".....you are yourself. Just make it better. I have always said, take care of your body, you know yourself better than anyone.
If you like to exercise, then make a plan. It takes 21 days to form a habit. I remind myself of this daily.

Some ideas to jump start your January...

1. Meal plan! Get your list of meals started. This will save you stress and money if you have a plan!

2. Each week, make two goals....one for yourself and one for home. You can do this.

3. Read at least 15 minutes a day. Whether its a new book, a devotion, an article online. It helps with your brain.

4. January can be a long cold month...Cheer yourself up with a new oil or a new candle, buy a diffuser.

5. Find 10 things to sell, donate or throw away...de clutter a room a week.

6. Write a hand written letter to someone, or a card. Snail mail is the best mail.

7. Drink hot chocolate, grab your favorite quilt and watch a movie...or better yet, take a nap.

8. Schedule a pot luck or a Soup Swap with your friends.

9. Connect with friends, schedule lunch or dinner, or even coffee. Friends keep us going. And they are free therapy!

10. Go get a pedicure or a massage. We deserve this!!
