Works for me Wednesday




Today is another BACKWARDS edition of Works-For-Me Wednesday. Instead of sharing one of your brilliant life tips with Bloggityville, you ask your kind readers for their suggestions in handling a specific problem.

With the holidays around the corner...I'm looking for some easy meals to make or freeze. I love being on top of things for the holidays and to make things easy for me and my family. Also I'm looking for any candy recipes that are different and appetizers that are easy.....EASY is the word I'm looking for. Any bread recipes are appreciated too......thank you and Happy Holidays to you and your families....

I am getting ready to go to a workshop on this topic at my local Extension Office. Several Extension Professionals will be giving out information on this topic. It starts at 1:30 so maybe tonight I will have time to get back on and let you know what I learned. I do not know what county you are in in Ky, but I used to work at a County Extension agent and they have several workshops on this topic, you might want to check out. Like I said if I learn anything great I'll be back!

Canapes are very easy appetizers. No cooking required. Just spread something on bread just like you would a sandwich. Top with a tiny garnish and, voila! To make it fancy you can use small cookie cutters either round, square, star or an appropriate shape such as ghost or cat for Halloween, leaf or acorn for Thanksgiving. You can also use crackers instead of bread. You can use toasted bread or slices of baguette too. You can spread cheese, pate, potted meat (poor man's pate), caviar (rich man's fish eggs), peanut butter, deviled egg, etc.. For garnish add parsley, paprika, sun dried tomatoes, olive slices, raisins, etc. You can either display on large trays on a table, or lots of plates all around your party area and just replace the plates as needed. It's easy.

Every year I make dozens and dozens of pumpkin rolls and freeze them. They are universally beloved, and if I need a quick gift or have unexpected company, voila! I will be posting the recipe and tutorial next Wednesday. They are very easy to make, they only look hard!

Candy: Fudge is a super easy candy to make and always delicious! Another really easy thing to make is chocolate covered cherries (buy the maraschino ones with the stems, drain them and pat them dry with paper towel, melt chocolate & dip them, put on wax paper until set - to make them extra fancy I like to drizzle a different chocolate over them) - there are always a hit at my annual openhouse.

For appetizers: baked brie is delicious and simple, cheeseball is also easy and you can freeze it ahead of time and just thaw before serving, and just a cheese tray of specialty cheeses with "gourmet" :) crackers is always nice. (My toddlers LOVE the specialty cheeses more than regular cheddar :)). I often serve fruit and veggie platters for appetizer, too!

Freezer meals: chili, chicken pot pie, taco meat, bbq beef or pork.

The chicken nuggets recipe I posted awhile ago is a great freezer meal - just make them up, but don't bake them. Simply freeze them on a cookie tray and then pop into ziploc. When you need a quick dinner put them in the oven and 20 minutes later it's ready.

I'm another advocate for fudge - I believe you can make it ahead and freeze it too. Toffee is super easy and cheap to make when you need a gift for someone - a nice tin to put it in and it seems like a specialty gift.

Breakfast casseroles freeze pretty good, I've seen recipes for those...chili, soups, lasagna too.
I buy some jars of cranberry chutney and rasberry chipotle sauce sold in a store here and pour them over blocks of cream cheese for appetizers; serve with crackers or wheat thins.
