Some holiday favorites

Today I thought I would share with you all some of my favorite recipes....since the holidays are upon us...we can all use a good one now and then.

First I'm posting Paula Deen's Chicken Divan...it is wonderful and worth making......

2 (10-ounce) packages frozen broccoli, chopped
6 cups shredded chicken, cooked
2 (10 3/4-ounce) cans condensed cream of mushroom soup
1 cup mayonnaise
1 cup sour cream
1 cup grated sharp Cheddar
1 tablespoon fresh lemon juice
1 teaspoon curry powder
Salt and pepper
1/2 cup dry white wine
1/2 cup freshly grated Parmesan
1/2 cup soft bread crumbs
2 tablespoons butter, melted

Preheat oven to 350 degrees F.

Remove the outer wrappers from the boxes of broccoli. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a casserole dish. Add the shredded chicken.

In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.

Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan, bread crumbs and butter and sprinkle over the top.

Bake for about 30 to 45 minutes.

Cook's Note: Try topping with Cheddar or Gruyere cheese.


Next I thought I would share Steaming Hot Holiday Punch

Steaming Hot Holiday Punch
~
3 cups apple juice
3 cups orange juice
6 cups cranberry juice
3/4 cup maple syrup
2 tsp powdered sugar
1 1/2 tsp cinnamon
3/4 tsp cloves
3/4 tsp nutmeg
~
Combine all ingredients in a large, heavy pan. Bring to a boil and turn to simmer for a few minutes. Put punch in a crock pot on low to keep warm. You can add Dark Rum to this if you want.


Wicked Delight is made every year at my home and we love it......trust me you will too

1 Large Jar Dry Roasted Peanuts UNSALTED

1 box small pretzel sticks

1 small box Golden Graham Cereal

2 cups of pecans

12 squares of white chocolate almond bark

Melt White Chocolate in a double boiler or in microwave

Mix nuts, cereal and pretzel sticks. Pour chocolate on mixture.

Stir and coat well. Spread onto wax paper to cool….store in an air

Tight container….

Makes a lot.



I make this next one Christmas Eve Morning...a BIG hit.
Overnight Carmel French Toast

  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 tablespoons light corn syrup
  • 1 cup chopped pecans, divided
  • 12 slices French or Italian-style bread
  • 6 eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • Caramel Sauce
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 tablespoon light corn syrup
  1. In a small saucepan, combine 1 cup brown sugar, 1/2 cup butter and 2 tablespoons corn syrup. Cook over medium heat, stirring constantly, until thickened.
  2. Pour sauce into a 9x13 inch baking dish and sprinkle with 1/2 cup pecans. Place 6 slices of bread on top of the sauce, sprinkle with the remaining pecans and cover with the remaining 6 slices of bread.
  3. Combine eggs, milk, vanilla, nutmeg, cinnamon and salt in a blender. Pour egg mixture evenly over bread slices, cover the baking dish, and refrigerate for 8 hours or overnight.
  4. The next morning, preheat oven to 350 degrees F (175 degrees C). Remove the French toast from the refrigerator 30 minutes prior to baking. Bake in preheated oven for 40 to 45 minutes, until lightly brown. Drizzle sauce over the toast right before serving.
  5. To make the Caramel Sauce: In a small saucepan, combine 1/2 cup brown sugar, 1/4 cup butter and 1 tablespoon corn syrup. Cook until thickened, stirring constantly.
I also do alot of cream cheese with Hot Pepper jelly in Red or Green with Wheat Thins alot.....also Tina @ Antique Mommy gave me this appetizer last year and it is to die for...

Sausage Dip

1 pound of Sausage browned
1 can of Rotel...or diced tomatoes with green chili's
1-2 packages of cream cheese

Put in a crock pot and serve with Tortillas Chips....it is wonderful

Oh YUM! That makes me hungry...that punch sounds good, do you use cranberry juice cocktail or the 100% juice? The snack mix sounds really good too, thanks for sharing these Jen!
