A Summer Recipe

I have to share this recipe with you...it is so good for a summer lunch or a church potluck or a great side dish........it's a Paula Deen.....you just have to try it though...so good.

Corn Salad

2 cans of whole kernel corn drained
1 small white onion chopped
1 green bell pepper chopped
1 cup of real mayo
1 small bag of chili cheese Frito's

Mix the first 4 ingredients together...chill ...when serving.... add the chips on individual plates and mix...so good....and a cool lunch on these hot summer days.....please let me know if you try this...yum yum!

This sounds really good, Jen. I'd never have thought to make a salad out of canned corn, but I'm going to try this. Simple recipes like this are perfect for hot summer days!

That sounds good! I make one similar that has tomato in it....I don't keep real mayo but it sure tastes good!

This sounds good, Jen! I should have known with mayo that it would be a Paula Deen recipe. She loves her mayo as much as I do mine :) I make a corn and black bean salad with red onion, similar to this, but without the mayo. It has more of a vinaigrette on it. Love these kinds of things in the summer - thanks for sharing!
