Some stuff to talk about

Good Morning everyone. The weather here today is supposed to get ugly. So me and Miller are staying in. It's quiet in the house this morning. Miller is still sleeping and Scott took Madison early to school. I have started some laundry and since we were all sick last week I didnt get alot of house work done. So....I'm working on bathrooms and floors today.

Alot of you asked for my Mexican Lasagna recipe......it is so good....you just have to try this one.

Mexican Lasagna


1 pkg Lasagna Noodles

1 ½ ground beef

1 pkg Taco Seasoning

1 can corn with red and green peppers

½ cup water

1-8 ounce cream cheese onion & chive

1 cup shredded cheddar cheese/ monterary jack blend

1 can enchiladas sauce

1 can green enchiladas sauce

1 medium jar pace picante sauce with cilantro

Cook and drain noodles…..brown ground beef…drain. Add 1 pkg of Taco Seasoning, 1 can of the corn with peppers, ½ cup of water…..mix. Add to the mixture, cream cheese onion and chive and 1 cup of shredded cheddar cheese/ Monterary jack blend, the can of enchiladas sauce and the can of green enchiladas sauce..the medium picante sauce…mix very well on medium heat. Put a small of beef mixture on bottom of a 9x13 pan sprayed w//PAM. Layer noodles, beef and some more cheese on top…alternate until all used and end with sprinkled cheese…Cover with foil. Bake @ 375 for 45 minutes….

You will not regret making this and you will have leftovers....so plan on it in your meal plan for 2-3 days......we love this. Scott says its the best thing I make....compliment......

So we got through last week. What a week. Now I have Valentines Day to get through. I need to call parents today for the party at school. We are going to do Ice Cream Sundaes and they are going to decorate Valentine Boxes....I thought something different with the Sundaes would be nice. I need to pick up Madison's teacher something....maybe a gift card to Sonic. Lunch is always nice. I have Madison something for Valentines...she got a new Hollister Bag and she wanted the Kangaroo webkinz......Miller I'm not so sure yet. I'm going to grill Steaks that night and looking for a fabulous desert to make. What are your plans for Valentines Day?

My parents are doing well. They have 2 1/2 weeks left before they come and I'm ready for them. I miss my mom.

Scott and I have been trying to figure out vacation......it wears me out.
Madison is going to camp for the first time......I'm a little worried.
I know she will do fine. I went in 4th grade when I was young....

Well....enough for now. I need to get the chicken out so I can get dinner in the works...we are having Parmesan Chicken tonight.

I have nothing planned yet for Valentine's day... I'm lucky that I know what we are eating tonight! ha ha! :)

What kind of camp is Madison going to? Emily wants to go to church camp this summer and I think we are going to let her. A little scary!

We are making our kids coupon books for Valentines day for stuff that they can do with us. I'm going to post about it later in the week.

I just copied the Mexican lasagna recipe. I'm going to save it and make it when Dan is home from his next trip. Sounds awesome!

I like making something fun for Valentine's dinner. A heart shaped meatloaf with heartshaped muffins or biscuits. I decorate the table with valentine candles and sprinkle those little heart candies around it. Sometimes I get the kids some chocolates, usually I'll make cupcakes or cookies. This year Dan will be traveling, so I'll have to come up with something for just the two kids who are home. Maybe we'll order a heart-shaped pizza. Papa Murphy's is selling them this year.

Emily went to Girl Scout camp the summer after 4th grade and loved it! She didn't want to come home! She went with her best friend and they had a ball. I felt very comfortable with her being there. I'm sure she'll want to go again.

I have not made plans for Valentine's yet. My son's b-day is today and my husband b-day is next week. I have to get through those first.

Boy, that Mexican lasagna sounds good, Jen, and I love making something that results in lots of leftovers. Leftovers means a night of no cooking!

I'll probably spend Valentine's morning doing something with Rob and Valentine's night watching Surivor since he works evenings. And that's only if our poor burned down TV station gets up and running again!
Hey, Jen, thanks for stopping by. It would be hard for me to tell you what colors to go with since I have no idea what is in the rest of your home. I'd say to pull from other parts of your house as to what colors you want to bring in that room. With neutal pine furniture, you can bring anything in there you want. The animal prints will mix well with casual florals or checks or paisleys, and it doesn't really matter about colors, as long as you're not going all pastel or something. So, what else do you have in the rest of your house. That should dictate what colors flow into this room too. That's a good starting point.

Our weather is supposed to be bad/stormy here too tonight.
I think some of my kids went to church camp when they were in 4th grade, it was a good way to ease into it.

Yummy recipe!

My husband is just in the National Guard. We are in Catlettsburg Ky. It was crazy here last night. I'm hearing for others today of several tornados that touched down.

I cannot wait to make this recipe. I am going to put it on my shopping list for the next pay day. I made an easy crock pot Mexican casserole last night and it was good, but the leftovers were a little dry.
