I thought I would share this great recipe. Let me know what you think.


King Ranch Chicken Casserole

INGREDIENTS

  • 1 (3 pound) chicken, boiled and deboned
  • 1 (14.5 ounce) package tortilla chips
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 onion, chopped
  • 3 cups shredded Cheddar cheese

DIRECTIONS

  1. Preheat oven to 300 degrees F (150 degrees C.)
  2. Layer the chips in a 9x13 inch casserole dish.
  3. Combine the tomatoes, chicken soup, mushroom soup and onion. Pour half of mixture over chips. Layer the chicken pieces, half of the cheese and the remaining soup mixture.
  4. Bake at 300 degrees F (150 degrees C) for 20 minutes. Top with the remaining cheese and return to the oven until the cheese is melted.

I'm off today for a Dr appointment for Miller....lunch with the kids....a trip to the library....a quick trip to the Farmers Market....dinner tonight is Burrito Pie and a salad. I'm cooking for my neighbor too who has had foot surgery. Have a great Tuesday everyone.

I've made that recipe and it is soooo good! You should post the recipe for Burrito Pie...I'd like to have that one.

We need to make a trip to the library. I've got grocery shopping to do today...ugh!

Every time you post your dinner for the night on the blog I am wishing I could be eating at your house. You always have something yummy planned. I don't know how you stay so organized with all you have to do. You are amazing girl.

You can bet I'll be making this so thanks for the recipe.

I took 2 of mine to the doc today, too. I am glad it is over. We actually got in and out very fast. What a blessing.

I am sure your neighbor is going to be so very grateful for your cooking!

Now, have you posted that burrito pie recipe, because that sounds delicious?

That has been a favorite recipe in our family for 40 years. For some reason, we've started a tradition of eating it on Halloween night. I don't know how that happened.

It freezes well too, and I use left over turkey after Thanksgiving to make some up.
I have always loved this recipe, love eating it rather! But don't know when I've made it...is it too much work?
You've been busy again, I've been gone and am playing catch up again!

This is a favorite at our house. I sometimes even do it in the crock...and it works great!
