Simply freeze them on a cookie tray and then pop into ziploc. When you need a quick dinner put them in the oven and 20 minutes later it's ready.<BR/><BR/>I'm another advocate for fudge - I believe you can make it ahead and freeze it too. Another really easy thing to make is chocolate covered cherries (buy the maraschino ones with the stems, drain them and pat them dry with paper towel, melt chocolate & dip them, put on wax paper until set - to make them extra fancy I like to drizzle a different chocolate over them) - there are always a hit at my annual openhouse.<BR/><BR/>For appetizers: baked brie is delicious and simple, cheeseball is also easy and you can freeze it ahead of time and just thaw before serving, and just a cheese tray of specialty cheeses with "gourmet" :) crackers is always nice. (My toddlers LOVE the specialty cheeses more than regular cheddar :)). No cooking requi...Canapes are very easy appetizers. No cooking required. Just spread something on bread just like you would a sandwich. Top with a tiny garnish and, voila! To make it fancy you can use small cookie cutters either round, square, star or an appropriate shape such as ghost or cat for Halloween, leaf or acorn for Thanksgiving. You can also use crackers instead of bread. You can use toasted bread or slices of baguette too. You can spread cheese, pate, potted meat (poor man's pate), caviar (rich man's fish eggs), peanut butter, deviled egg, etc.. For garnish add parsley, paprika, sun dried tomatoes, olive slices, raisins, etc. You can either display on large trays on a table, or lots of plates all around your party area and just replace the plates as needed. I do not know what county you are in in Ky, but I used to work at a County Extension agent and they have several workshops on this topic, you might want to check out.
